As a local, I skied past One Ski Hill Place countless times, but it never occurred to me to actually eat in its main restaurant, The Living Room. I automatically dismissed it as a place only guests of One Ski Hill Place dine at — an establishment probably too exclusive for “just anyone” off the slopes (or streets) to walk into. In fact, I didn't even know if, beyond the bar, it was open to the public for dinner.
Then a friend suggested I try it. Being a RockResort, I expected the cuisine to be exquisite. What I didn't expect were the prices to be so accessible: Entrées range from $24 for pan-seared Colorado trout to $34 for grilled wagyu beef tenderloin, the latter of which is incredibly tender and juicy, cooked to perfection by chef Jeff Baldwin. Other main dishes include organic chicken breast, pork chops, braised beef ribs, lemon herb risotto, Colorado lamb loin and seared duck breast. But it's the accompaniments that really top off the dishes: creamy fennel polenta with pearl onion and cherry tomatoes sets off the lamb, adding texture and substance to an already flavorful meal. Chestnut-confit stuffing and grilled apple with orange-coriander jus complements the duck, and horseradish whipped potatoes and honey glazed carrots seem as though they were invented for short ribs.
Soups and salads depart from the usual, with a wild mushroom soup; spicy butternut squash bisque topped with grilled apples, toasted hazelnuts and gruyere; seared scallop and frisee with marinated artichoke and balsamic vinaigrette; and beet and bleu cheese salad with arugula and walnuts.
Appetizers include tuna on fresh micro greens, citrus-marinated grilled prawns, and cured meats and local cheeses. An extensive wine list, as well as spirits, liven The Living Room, and desserts like the espresso créme bruleé and chocolate caramel pyramid make it that much sweeter.
But it's not just the cuisine that makes The Living Room a special place to dine; it's the overall atmosphere of One Ski Hill Place. A smaller stone fireplace within the restaurant reflects the massive stone fireplace that greets guests as they walk into the full-service resort. Just ascending the grand staircase into The Living Room makes you feel as though you've entered vacation dreamland, and actually, you have.
One Ski Hill Place provides every luxury a guest could want, and more. Each unit, from studios to four bedrooms, overlook either Breckenridge Ski Resort or the Continental Divide. Rooms include a wet bar, kitchen with granite countertops and stainless steel appliances, queen or king beds, a washer and dryer, a stone fireplace, cushy furniture and a television in every room.
The two-lane bowling alley is built to resemble a mine shaft, and game rooms have a pool table, televisions and more. Guests can reserve one of two movie lounges, which seat eight in oversized theater chairs and feature Wii games, DVDs to check out, 60-inch high-definition televisions with surround sound and a wet bar and kitchenette.
One of the three indoor pools sports huge water guns for kids to play around with, while adults can lounge on cushy chairs or sit in the outdoor or indoor hot tubs. The area also has a steamroom, sauna and 24-hour fitness room. And, the Rejuvenation Center offers massages with aromatherapy, hot stones, warm oils and shea butter.
