Colorful Cooking culinary classes in Breckenridge, Silverthorne

Tracy Miller, author of the Colorful Cooking culinary column that runs occasionally in the Summit Daily News, will be teaching three cooking classes in Summit County in October.

On Thursday, Oct. 16, Colorado Mountain College in Breckenridge has invited Miller to join its experienced culinary team of more than 50 professionals for her first course, titled "A Taste of Japan." Learn how to roll sushi and explore cooked dishes, including chicken yakatori, gingered beef salad, steamed pork buns and soy green beans.

"The classes at CMC are unique and travel the world with flavors, technique and experienced chefs," Miller said.

AT OLIVE FUSION

Olive Fusion in Breckenridge and in the Green Village of the Outlets at Silverthorne will be offering Colorful Cooking classes, as well. Things heat up at the Breckenridge store on Saturday, Oct. 18, with an appetizer cooking class that will get you spiced up for holiday parties. The menu includes lavender deviled eggs, white bean soup with shrimp, pear chutney pork crostini, panzanella salad and more.

On Thursday, Oct. 23, the Silverthorne store goes Italian with "A Taste of Italy." This class will explore Italian love for olive oil and balsamic with a dinner to delight. The menu includes spicy clams, Tuscan Caesar salad, creamy blue cheese polenta with figs and roasted chicken, eggplant, Brussels sprouts and dessert. Both classes are hands-on, with wine, food, conversation and dessert.

"She is all about cooking healthy," said Crystal Otto, owner of Olive Fusion, of choosing to work with Miller. "She cooks with a lot of fruits and vegetables, and her healthy living — she's really, really good with it, that's her mainstay. She's creative; she has a lot of unique and delicious recipes."

Olive Fusion's holiday festivities boil over on Saturday, Nov. 15, when Miller will demonstrate how to make healthy gourmet sauces using specialty oils, spices and herbs at the Silverthorne location. The event is part of the Outlets at Silverthorne's Shopping Extravaganza event benefiting local charities. At Olive Fusion, taste the fresh flavors served on risotto, and leave with a sack full of creative holiday hostess, gift and dinner ideas. Sauces will include olive salsa, gremolata, harrissa pesto and pickled goodies. In addition, she will be serving a cranberry spinach dip and chicken sage dip that will decorate a tasteful Christmas buffet table. Free recipes will be handed out with the samples, and Miller will be available to help with any culinary questions.

Miller said she is thrilled to teach culinary classes in Summit County.

"I lived in Breck for five years and worked as a radio DJ on KSMT," she said. "I'm really looking forward to the classes. We will be eating, learning, meeting new people, chatting about food and skiing."

ABOUT COLORFUL COOKING

Tracy Miller sliced into the culinary world in a unique way. After years of being a radio DJ, she was hired at TV8 Vail as their culinary expert, interviewing chefs and going to restaurants and food shows. She learned techniques and how to cook classic dishes.

The one thing she said she was lacking was vegetables. Thus, Miller discovered her focus, enrolled in culinary classes, found a chef mentor and began Colorful Cooking.

Miller has been teaching private and public cooking classes in the Vail Valley for five years and hosts two cooking shows — "Eat and Explore" and "The Local Dish" — and a weekly cooking demonstration on TV8 Vail.
