Baked in Breck is the best place to get a wedding cake or dessert in Summit County, voters say

What makes Baked in Breck so special isn’t just the customization and isn’t just the delicious flavors — but the powerful combination of the two. With that unbeatable union of beautiful and delicious, Baked in Breck won the title of Best Wedding Cakes & Desserts in the 2024 Best of Summit contest.
You can get your hands on a Baked in Breck cake or dessert through a custom order, or find owner Nicci Russell at various markets around the area.
Russell set up shop at the Breck Sunday Market this summer where she gained some brand recognition. She also made the goal to raise $1,000 for Mountain Pride through sales of special rainbow products.
“Being a bisexual individual and being part of that community, it’s nice to be able to give back to a direct, local cause that I think is super important up here, and it’s great to see they have resources in the mountains,” Russell said.
In 2017, she earned a degree in neuroscience and was planning on going to medical school, but she decided she wanted to pursue happiness instead. So she moved to the mountains.
Inspired by her grandmother’s baking, Russell did a lot of baking for her friends and roommates and eventually founded Baked in Breck in 2021. She started selling cupcakes on Facebook out of her home, but she has since upgraded to her own kitchen in Keystone.
“I have always been inspired by my grandmother growing up. She taught me how to bake. That was always a special thing we did together,” Russell said. “When I moved out here from Michigan, I was baking in my kitchen for fun and all my roommates, everyone was like you should really pursue this. It was something I always wanted to do. I wanted to be a pastry chef.”
While she started the business because it brought her joy, she loves that her work can bring joy to others as well.
“Just seeing people’s reactions when they try the first bite of the cupcake or when they see the product, getting to be that little bit of joy in people’s day is something I really love and cherish,” Russell said.
Baked in Breck also won the title of Best Dessert and a top-five placement for Best Baked Goods/Bakery in the 2024 Best of Summit contest.
