Chop-House to replace Denny’s

SILVERTHORNE – Employees of the future Summit Chop-House this week have been remodeling the former Denny’s on Rainbow Drive from a pancake house into a steak house.

Denny’s closed Sept. 19, and on Oct. 3 a locally owned, fresh-cut steak house will replace the breakfast chain restaurant.

“We’ll be featuring steaks directly from a butcher in Denver, cut fresh here on site,” said Jeff Hardenbrook, who is working with his partner, Anwar Hassan, to open and operate the Summit Chop-House. “We’ll serve lunch and dinner from 11 a.m. until 11 p.m., with a full bar that will stay open later.”

Prices range from $10 for an 8-ounce sirloin to $28 for a 20-ounce, T-bone steak. Seafood, chicken, prime rib and pork chops are also on the menu. The entrees include bread, salad and a choice of two side dishes.

Future employees of the Summit Chop-House gutted the restaurant the past several days, tearing out the old green booths. They will rebuild the restaurant with tables, floors and walls all made of natural wood.

After Denny’s sudden closure last week, several former Denny’s employees walked up the street to the Village Inn looking for work.

“They said most of them were surprised. The managers just said, “You don’t have to come to work tomorrow,'” said Hana Wisneski, assistant manager at the Village Inn on Silverthorne Lane north of Interstate 70.

Denny’s closure increased business for Village Inn, Wisneski said.

Summit Chop-House plans to have a grand opening a couple weeks after the Oct. 3 opening date. The new phone number after Sept. 30 will be (970) 262-CHOP. Until then reservations can be made at (970) 468-1171.
