FRISCO – This weekend will be a trial-by-fireworks for local restaurateur Bobby Kato.Kato, co-owner of Frisco’s Tuscato Ristorante, will test his food and beverage prowess by opening a new restaurant, the Island Grill, at Frisco Marina on one of Summit County’s busiest holidays.

“We’re opening up really fast on a crazy weekend, but it’ll be really fun,” Kato said. “We’re scrambling right now.”The Frisco Town Council approved a four-year concessionaire contract Tuesday night, giving Kato the go-ahead to set up shop at the marina.

This summer, the Island Grill will operate out of a temporary structure while the town designs and builds a permanent building for the restaurant’s future years. The eatery will set sail with a full bar and an assortment of sandwiches and grill items, but Kato expects to expand the menu once he can operate out of the permanent restaurant facility.

The Island Grill’s regular hours will be 11:30 a.m. till sunset.Julie Sutor can be reached at (970) 668-3998, ext. 203, or at jsutor@summitdaily.com.
