New deli truck sets up shop on Main Street in Frisco

After 17 years of sandwich operations in its Breckenridge location, Downstairs Deli officially opened a second location in Frisco.

For those driving or walking down Main Street in Frisco, it is hard to miss the neon-pink truck parked next to Rocky Mountain Laundries. This hot pink truck in Frisco is the deli’s new food truck operation: Summit Deli.

Why hot pink? Part-owner Princes Leah Lathavong said the business is female owned and “it’s just what the girls wanted.” 



The truck opened its doors at the end of June, and Lathavong said they plan to keep it open year-round. 

“We are already preparing because winter is coming. It’s going to be hard, but we are determined to keep it open throughout the winter,” Lathavong said. 



Lathavong has been a partial owner of Downstairs Deli since January 2020 and originally had plans to get the truck up and running last summer. 

Some delays arose that pushed the opening date back. After a long wait, Lathavong was ecstatic to get this location up and running in June. 

Those visiting the truck can find all the fan-favorite sandwiches from Downstairs Deli, including The Capone, 40 Watt and The Dee Dee. 

Prices for sandwiches range from $7.50 to $13.50. Drinks including ice tea and soda range from $2 to $3.

Business hours are 10 a.m. to 5 p.m. Mondays to Thursdays; 11 a.m. to 5 p.m. on Fridays, 10 a.m. to 5 p.m. on Saturdays, and 10 a.m. to 4:30 p.m. on Sundays.
