New restaurant Sauce on the Blue opens in Silverthorne

A new Italian restaurant, Sauce on the Blue, opened in Silverthorne on Friday, Aug. 19 near the Silverthorne Pavilion. Featuring lunch and dinner, a full bar, and an outdoor dining area right along the Blue River, the restaurant is one of the newest spots in the area where the town of Silverthorne is focusing its downtown revitalization efforts.
The menu features appetizer items like bruschetta, antipasto platter and sauteed mussels. The pasta menu features many dishes — such as penne alla gorgonzola, linguini and clams as well as a ravioli of the day — and a sampling of entrees includes chicken Marsala, Colorado Rosen lamb sirloin or seared salmon. There will be lunch and dinner specials each day. This Sunday, the restaurant will host its first brunch featuring bottomless mimosas for $15 and a Bloody Mary bar.
The restaurant was opened by Shervin Rashidi of Rocky Mountain Hospitality and several other investors, including Tim Applegate, who is also acting as general manager. Rashidi is also a managing partner with Quandary Grille and Taddeos Ristorante Italiano in Breckenridge, and Inxpot in Keystone. The town issued two grants to help with the financing of the restaurant to promote the town’s urban renewal district.
