Breckenridge restaurant plans to open location in Maui, and a local hospital gets a new leader. Here’s a roundup of business happenings in Summit.
Some of Breckenridge’s fan-favorite restaurants are expanding their operations outside of Summit County, while the health care sector has some new additions that will impact operations locally. Here’s the latest on businesses and nonprofits in Summit County.
Breckenridge Brewery to add another location to its list mid-August
Breckenridge Brewery will be expanding to another Colorado city in mid-August, just a year after its sale to cannabis company Tilray Brands. Breckenridge Brewery will be moving into the spot that housed Sweetwater Brewing Co., which is another Tilray-owned brand, in Fort Collins at 1020 E. Lincoln Ave.
The brewery will celebrate the opening of its new spot with a First Pour Party Aug. 17.
“Fort Collins is a rapidly growing city. It still offers a small-town feel that perfectly aligns with Breckenridge Brewery,” spokesperson Andrea Green wrote in an email. “It’s known for its close proximity to outdoor recreation, bike-friendly environment and artistic culture, making it an ideal location for our community-focused brewery.”
Green said the community-based focus the company is putting into this location is what will set it apart from the other two. She explained the Breckenridge flagship spot is meant to evoke the small and quaint feel of a mountain town, the Littleton location was designed to host entertainment such as live music, and Fort Collins will have a “community hub” feel.
“It’s a place where locals can gather on weekends or after a weekday bike ride without needing to travel to Denver,” she said.
She said there are no immediate plans to expand further into other locations.
Aurum Food & Wine to open first location outside Colorado
The Destination Hospitality Group announced it will be opening another location of the Aurum restaurant in early 2025 at The Shops at Wailea in Maui County, Hawaii. It will be the first Aurum location outside of Colorado. Representatives of the group say an exact opening date has yet to be nailed down.
Chef Partner Taylor Ponte and General Manager Partner Natasha Ponte, both Maui natives, will be leading the operation and placing focus on local ingredients, partnering with vendors such as Hua Momona Farms.
“Opening Aurum Maui at The Shops at Wailea is a significant milestone for me as a chef,” Taylor Ponte was quoted as saying in a news release. “Our menus celebrate local farms and sustainable products, reflecting the community that makes hospitality in Hawaii unique.”
Founder of Destination Hospitality Group and Chief Executive Officer Phillips Armstrong said in a news release that the reputation of the destination resort community at The Shops at Wailea is what drew him to the location.
Aurum Maui’s menu will be inspired by the Aurum Food & Wine concept, yet with some local twists. Patrons can expect items such as ahi tuna with tonnato sauce and pickled shallots, and crispy croquettes filled with manchego and roasted garlic on the Maui menu.

St. Anthony Summit Hospital in Frisco gets a new leader and esteemed cardiologist joins board of local nonprofit
CommonSpirit Health’s Mountain Region announced Trixie VanderSchaaff took over as the chief executive officer of St. Anthony Summit Hospital in Frisco on May 3.
Representatives of the hospital said she will continue to serve in her current role as the hospital’s chief nursing officer, a role she has held for eight years. VanderSchaaff has spent 26 years at St. Anthony Summit Hospital and has served in nursing and executive leadership roles.
“Over the past eight years, serving as chief nursing officer has allowed me to witness the incredible dedication and unwavering commitment of each and every member of our hospital,” VanderSchaaff said in a news release. “Rest assured, my commitment to our community and its health is as strong as ever.”
Starting Hearts adds retired cardiologist to nonprofit board
In other health care news, Starting Hearts, an Eagle and Summit County-based nonprofit that focuses on saving lives of sudden cardiac arrest victims through free trainings, announced the addition of Dr. Harris Effron to its advisory board.
The retired cardiologist hails from San Diego and has over 40 years of experience. He previously served as chief of the division of cardiology at Kaiser Permanente Hospital in San Diego and as an associate professor at University of California San Diego School of Medicine.
“By educating individuals in CPR and providing access to defibrillators, Starting Hearts is truly making a difference in the community,” Effron said. “It brings me great joy to be able to contribute my time and experience to such a wonderful organization.”
